You can find premade hummus at any supermarket. If you don’t have any, you can easily make your own using canned chickpeas. Simply drain the liquid off the chickpeas and place them in a blender along with the following ingredients:
- 1 clove garlic
- ½ teaspoon kosher salt
- ¼ cup extra virgin olive oil
- 2 teaspoons lemon juice
- 3 tablespoons tahini paste
- Add water until the mixture reaches a smooth consistency. You can add additional salt or lemon juice to taste.
Falafel Salad
This recipe makes about 4 cups of falafel salad. You can use leftover falafel balls in this recipe. Just cut them into bite-sized pieces before adding them to the salad.
Ingredients:
- 1 pound cooked falafel balls (about 2 ½ cups)
- 1 large head romaine lettuce, torn into bite-sized pieces
- 1 medium red onion, thinly sliced
- 1 medium cucumber, seeded and diced
- 1 cup cherry tomatoes, halved
- 1 cup grape tomatoes, quartered
- ¼ cup parsley leaves, finely chopped
- 1/3 cup mint leaves, finely chopped
- ¾ cup crumbled feta cheese
- 1/3 cup kalamata olives, pitted and coarsely chopped
- 1/3cup roasted salted pistachios, coarsely chopped
Directions:
In a bowl, combine the falafel, lettuce, onions, cucumbers, tomatoes, parsley, mint, feta cheese, and olives. Toss gently to mix. Season with salt and pepper to taste. Serve immediately or chill for up to 1 hour. Garnish with the pistachios just before serving.
