Falafel Sandwich Recipe – Buffalo Cauliflower Falafel
- 1 pita bread
- 1 cup chickpeas, cooked and mashed (preferably canned)
- 3 tbsps falafel mix (I use store-bought falafel mix)
- 2 tsp onion powder
- 1 tsp garlic powder
- Pinch of cumin (optional)
- Salt and pepper to taste
- Olive oil for frying
- Buffalo sauce, to taste
- Fresh parsley
Leaves for garnish: In this recipe we used parsley but any type of fresh herbs would work well
- Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- In a food processor, mash chickpeas until they are smooth but still have some texture (you don’t want them to be too soft). falafel mix, onion powder garlic powder cumin, and salt and pepper to taste should all be added at this point. If you’d like, you can also add olive oil for frying if desired – just make sure it’s fully mixed in before distributing evenly among the falafel mixture.
- Shape the falafel mixture into small patties and place them on the prepared baking sheet. Drizzle with buffalo sauce, if desired, and parsley leaves (to taste). Bake for 20-25 minutes, or until crispy. Enjoy!
